Basbousa — Middle Eastern recipe
Basbousa, photographed for the Kitchen Pantri cookbook.

Basbousa

A dense, faintly sandy semolina cake, scored into diamonds before it bakes and drenched in lemon syrup the moment it comes out of the oven. It is not a light cake and is not trying to be — the whole point is a close, moist crumb saturated all the way through.
