Briam (Greek Roasted Vegetables)

Greece's answer to ratatouille: thick slices of potato, eggplant and zucchini layered with ripe tomatoes, red onion, garlic and parsley, drizzled with olive oil and slow-roasted - covered, then uncovered - until meltingly tender, caramelized and bathed in a rich tomato-olive oil sauce. A hearty vegan main with crusty bread and feta on the side.
