Elote — Mexican recipe
Elote, photographed for the Kitchen Pantri cookbook.

Elote

Corn on the cob charred until the kernels blister, then rolled in a lime-spiked crema, crumbled cotija and chili powder. It takes about as long as it takes the grill to heat up, and it is the reason people wait in line at a street cart.
