Gai Yang

Thai grilled chicken: thighs marinated in a paste of lemongrass, garlic and cilantro with fish sauce and palm sugar, then cooked hard over direct heat. It comes with nam jim jaew, the sour tamarind-and-chili dipping sauce that is half the reason to make it.
