Hibiscus Tea — Nigerian recipe
Hibiscus Tea, photographed for the Kitchen Pantri cookbook.

Hibiscus Tea

Dried hibiscus calyces steeped with ginger into a deep magenta drink that is sharply tart, faintly floral and completely unlike anything made from a tea leaf. Known as zobo in Nigeria, bissap in Senegal and sobolo in Ghana, and drunk cold by the glass.
