Sabich (Israeli Eggplant and Egg Pita)

Warm pita stuffed with golden fried eggplant, sliced hard-boiled egg, hummus and a crisp tomato-cucumber salad, all drizzled with lemony tahini sauce and tangy amba. Brought to Israel by Iraqi Jews as a Sabbath breakfast, it's now a beloved street food and a full vegetarian meal.
