Sachertorte

Vienna's most famous cake: a dense, fine-crumbed bittersweet chocolate sponge, lightened with whipped egg whites, split and filled with tangy apricot jam, brushed all over with more jam, then poured with a glossy, fudgy dark chocolate glaze. Traditionally served with a mound of unsweetened whipped cream (Schlagobers) to balance its richness.
