Bucatini all'Amatriciana

A Roman trattoria classic: crisp, golden cubes of guanciale (or pancetta) rendered until their fat melts into a simple sauce of San Marzano tomatoes, a little onion, white wine and chili, then tossed with hollow bucatini and plenty of sharp Pecorino Romano.
