Trinidadian Doubles (Bara with Curried Channa)

Trinidad's beloved street breakfast: two soft, puffy, turmeric-golden fried flatbreads (bara) sandwiching a spoonful of saucy curried chickpeas (channa) simmered with onion, garlic, cumin and curry powder, then topped with a quick cucumber-lime chutney and as much pepper sauce as you dare. Messy, cheap and completely addictive.
