Kelewele (Ghanaian Spicy Fried Plantains)

Ghana's favorite street snack: chunks of sweet, ripe plantain tossed in a fiery fresh paste of scotch bonnet, ginger, onion, garlic and warm spices, left to marinate, then fried until caramelized and crisp at the edges while staying soft inside. Sweet, hot and gingery, and classic with a handful of roasted peanuts.
