Kuku Sabzi (Persian Herb Frittata)

A deep green Persian frittata that's more herbs than egg: parsley, cilantro, dill and scallions bound with eggs and turmeric, studded with walnuts and tart barberries, and baked until set with golden edges. Traditionally served at Nowruz, the Persian New Year, it's good warm or at room temperature, with flatbread and yogurt.
