Pastel de Nata — Portuguese recipe
Pastel de Nata, photographed for the Kitchen Pantri cookbook.

Pastel de Nata

Portuguese custard tarts: a spiral of puff pastry pressed into a muffin tin, filled with a lemon-and-cinnamon custard and blasted in the hottest oven you have until the tops blister black. Shop-bought pastry gets you most of the way; the custard is where the recipe actually is.
