Red Red — Ghanaian recipe
Red Red, photographed for the Kitchen Pantri cookbook.

Red Red

Ghana's black-eyed pea stew, named for its color: red palm oil and tomato going into the pot, fried plantains going on the plate. The beans simmer down until the sauce clings to them, and it is eaten with a heap of sweet fried plantain on the side.
