Thieboudienne — Senegalese recipe
Thieboudienne, photographed for the Kitchen Pantri cookbook.

Thieboudienne

Senegal's national dish, and the ancestor of every jollof rice on the continent. Fish stuffed with a green herb paste is fried, then vegetables and rice cook one after another in the same tomato broth, so the rice ends up carrying everything that went before it.
