Atakilt Wat

Cabbage, carrots and potatoes stewed slowly in turmeric-stained oil until everything is soft and yellow and tastes of more than the sum of three cheap vegetables. It is the mild yellow dish on an Ethiopian platter, and it is there to balance the fiery red ones.
