Do Chua — Vietnamese recipe
Do Chua, photographed for the Kitchen Pantri cookbook.

Do Chua

Vietnamese quick pickled carrot and daikon: matchsticks salted for ten minutes, then covered in a sweet-sour brine. Edible in two hours, best the next day, and good for a month in the fridge. It is the crunch in a banh mi and it stands on its own next to anything rich.
