Borani Banjan — Afghan recipe
Borani Banjan, photographed for the Kitchen Pantri cookbook.

Borani Banjan

Eggplant slices browned in a pan and then simmered down in a garlicky tomato sauce, layered over garlic yogurt and finished with dried mint. The slices stay whole rather than being mashed into a dip, and it is as good at room temperature as hot.
