Chicken Vindaloo

Bone-in chicken marinated in a paste of dried chilies, garlic and whole spices ground up with vinegar, then simmered until the sauce goes dark and a slick of red oil rises to the top. The vinegar is not a background note — it is the thing that makes vindaloo taste like vindaloo rather than like any other curry.
