Idli

Steamed rice and lentil cakes, soft and slightly sour from an overnight ferment. Be honest with yourself about the timing before you start: the rice soaks about 5 hours, the ground batter needs 8 to 12 hours to rise, and only then does anything get steamed — so this is a soak-in-the-morning, grind-at-night, eat-for-breakfast dish.
