Kheer

Rice toasted in a little ghee, then simmered in milk for the better part of an hour until the grains fall apart and the milk reduces to something thick and faintly caramelized. Cardamom and saffron go in near the end, and so does the sugar — added early, it stops the rice ever going soft.
