Onion Bhaji

Thin-sliced onion salted until it weeps, then tossed with chickpea flour and spice and dropped into hot oil in loose, ragged clusters. Barely any water goes in — the onions provide it — which is why the strands stay separate and shatter instead of turning into a doughy fritter.
