Tandoori Chicken

Chicken slashed to the bone, left overnight in spiced yogurt, and roasted on a rack at high heat until the outside blackens in patches. A real tandoor runs at 900°F and a home oven does not, so the char comes from the broiler at the end — but everything else about it is the same.
